1. Slice the onions and chop the garlic.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the veal paupiettes and brown them on each side for a few minutes.
4. Remove the paupiettes from the pan and reserve them.
5. In the same pan, add the onions and garlic. Fry them until they are golden brown.
6. Return the paupiettes to the pan and add your broth.
7. Season with salt and pepper to taste.
8. Cover the pan and simmer over low heat for about 30 minutes, turning the paupiettes occasionally.
9. Check the cooking by making sure the paupiettes are well cooked inside.
10. Serve the veal paupiettes with the sauce and accompany them with vegetables or potatoes.
